Smoked trout salad, mooli, apple, beetroot and sunflower seeds: a recipe share

After spending the beginning of his career in some of Europe’s finest Michelin restaurants and hotels, Andreas had the opportunity to join Circle Health as Executive Head Chef at their flagship private hospital in Bath.  Andreas continues to work as Circle’s Executive Head Chef on various projects in the UK and China.

Smoked trout fillet flaked                    90g

Mooli small diced                                 100g

Cooked beetroot small diced      `       80g

Cucumber diced                                     80g

Granny Smith apple diced                    80g

Red onions finely chopped                   15g

Spring onions sliced                              20g

Sunflower seeds                                     30g

Dill chopped                                              3g

Lemon Vinaigrette                               40ml

Salt and pepper to taste

Place all ingredients in a bowl and combine gently.
Check seasoning and serve as required.
